Snow Pea & Mushroom Stir-Fry

Ingredients
- 1 T. rice wine or dry sherry
- 1 T. low-salt soy sauce
- 1 T. corn starch
- 1 T. minced fresh ginger (10 gm.)
- 2 T. light olive oil
- 4 oz. snow peas, strings removed
- 4 oz. mushrooms, sliced
- 1 cup water
Directions
- Mix corn starch with 1/2 cup COLD water and set aside.
- Make a broth with wine and soy sauce and set aside.
- In a hot wok, heat olive oil and ginger and stir-fry for 10 sec.
- Add sliced mushrooms and stir-fry 30 sec.
- Add wine/soy sauce broth. Cover and steam 1 minute.
- Cut snow peas in half, add to wok and stir-fry 1 minute.
- Add cornstarch/water broth and stir-fry 1 minute.
- Serve hot.
