Seared Pork Chops

Ingredients
- 2 pork chops, 6 oz. each, 1 inch thick
- 1/4 t. salt
- 1/2 T. flour
- 1/2 t. chili powder
- 1/2 t. onion powder
- 1/2 t. garlic salt
- 1/4 t. paprika
- 1/4 t. ground pepper
- 2 t. olive oil
- 1/2 cup chicken stock or bouillon
- 1 1/2 t. cider vinegar
- 1 t. honey
- 1 1/2 t. butter
- 1 T. chopped parsley or mint (optional)
Directions
- Take pork chops out of the refrigerator and season both sides with salt. Let rest in kitchen 30 minutes.
- Make a rub with the flour, chili powder, onion powder, garlic salt, paprika and pepper.
- Mix up a pan sauce with chicken stock, vinegar and honey.
- After 30 minutes, dry chops with paper towel and rub sides with the rub.
- Heat the olive oil in a medium hot skillet and add rubbed chops. Cook 2 minutes.
- Flip the chops, reduce heat to low and cook about 6 minutes or until a meat thermometer reads 145 deg.F.
- Remove chops let rest 5 minutes on a plate.
- Meanwhile whisk bouillon, vinegar and honey into the pan drippings.
- Swirl in the butter and add back the chops briefly. Pour pan sauce over chops and serve.
This recipe also works for chicken, but the chicken should be cooked to a temperature of 165 deg.F.
