Seared Pork Chops

  1. Take pork chops out of the refrigerator and season both sides with salt. Let rest in kitchen 30 minutes.
  2. Make a rub with the flour, chili powder, onion powder, garlic salt, paprika and pepper.
  3. Mix up a pan sauce with chicken stock, vinegar and honey.
  4. After 30 minutes, dry chops with paper towel and rub sides with the rub.
  5. Heat the olive oil in a medium hot skillet and add rubbed chops. Cook 2 minutes.
  6. Flip the chops, reduce heat to low and cook about 6 minutes or until a meat thermometer reads 145 deg.F.
  7. Remove chops let rest 5 minutes on a plate.
  8. Meanwhile whisk bouillon, vinegar and honey into the pan drippings.
  9. Swirl in the butter and add back the chops briefly. Pour pan sauce over chops and serve.
  10. This recipe also works for chicken, but the chicken should be cooked to a temperature of 165 deg.F.
