Rosie's Oatmeal Cookies
Prep time: About 50 minutes
Cooking time: 10 minutesMakes: four dozen cookies
Ingredients
- 1 cup butter
- 2 cups sugar
- 2 eggs, beaten
- 4 T. molasses
- 2 cups flour
- 1 1/2 t. baking soda
- 2 t. cinnamon
- 2 t. vanilla
- 2 cups oatmeal
- 1/2 cup chopped raisins
- 1 cup chopped dates
- 1/2 cup chopped walnuts
Directions
- Mix butter and sugar until the butter pieces are less than pea size (15 minutes)
- Stir in beaten eggs and molasses to blend.
- Add the flour, baking soda and cinnamon and mix well.
- Mix in vanilla, oatmeal, raisins, dates and walnuts.
- Mix this very thick dough until blended.
- Drop dough balls of about 2 T. batter onto two cookie sheets.
- Preheat oven to 350 deg. and bake 10 - 12 minutes. Cool for 30 - 60 minutes.
Rosie Wilson was the cook/baker at my wife's sorority in Berkeley around 1960. Legend has it that Rosie would give girls a copy of this recipe when they got engaged.
