Potato Tomato Soup

  1. Empty can of tomatoes and 1 cup water into 2-quart soup pot and puree.
  2. Peel potatoes if desired. Cut into 2-inch long sticks (like short french fries).
  3. Heat 2 T. oil in a wok and stir-fry potatoes until starting to brown (10 minutes). Put into soup pot with tomatoes.
  4. Heat 1 T. oil in the wok and stir-fry onions 5 minutes. Add garlic and stir-fry 3 minutes.
  5. Add onions, 2 cups water and veggie soup bouillon powder to soup pot.
  6. Simmer 15 minutes.
  7. Mix in yogurt and sriracha sauce and serve.
