Potato Tomato Soup

Ingredients
- 3 T. olive oil, divided
- 5 oz. chopped onions
- 1 t. diced garlic (or 1 clove, diced)
- 1 lb. potatoes
- 3 cups water
- 14 oz. diced canned tomatoes
- 2 T. veggie chicken broth powder
- 1 T. sriracha sauce (if desired)
- 4 T. plain Greek yogurt
Directions
- Empty can of tomatoes and 1 cup water into 2-quart soup pot and puree.
- Peel potatoes if desired. Cut into 2-inch long sticks (like short french fries).
- Heat 2 T. oil in a wok and stir-fry potatoes until starting to brown (10 minutes). Put into soup pot with tomatoes.
- Heat 1 T. oil in the wok and stir-fry onions 5 minutes. Add garlic and stir-fry 3 minutes.
- Add onions, 2 cups water and veggie soup bouillon powder to soup pot.
- Simmer 15 minutes.
- Mix in yogurt and sriracha sauce and serve.
