Persimmon Pudding

Baking time: 55 minutes
Makes: 8 servings.
Ingredients
- 1 large egg, beaten
- 1 cup white sugar
- 1 cup persimmon pulp
- 1/4 t. baking soda
- 1 cup flour
- 1 t. baking powder
- 1/4 t. ground cinnamon
- 1/4 t. vanilla extract
- 1 pinch salt
- 2 T. melted butter
- 1 cup almond milk (or cow's milk)
- 1/2 cup plain Greek yogurt (or whipped cream)
Directions
- Preheat oven to 325 deg. F.
- Beat egg and mix in sugar, persimmon pulp and baking soda.
- Mix in the flour, baking powder, cinnamon, vanilla, salt melted butter and milk.
- Grease a 4x9" bread pan. Pour in pudding mixture. Bake 55 minutes.
- Serve with a dollop of yogurt on each serving.
