- 1/4 cup pepitas (shelled pumpkin seeds
- 1/4 cup extra virgin olive oil
- 4 t. lemon juice
- 4 t. grated Parmesan cheese
- Spread pepitas on a baking sheet and toast them 5 minutes in 300 deg. F oven.
- Put pepitas into a food blender and blend until finely chopped.
- Add oil, lemon juice and Parmesan cheese. Blend until smooth.
Good as a salad dressing or as a dip.
