Okra - Tomato Stir-Fry
Prep time: About 10 minutes
Cooking time: About 20 min.
Makes: 2 - 3 servings
Ingredients
- 2 T. olive oil
- 1 cup chopped yellow onion
- 1 1/2 t. dried thyme
- 8 oz. okra
- 1/4 t. Creole seasoning
- 14 oz. canned diced tomatoes
Directions -
- Heat olive oil in a wok and stir-fry onions and thyme 5 minutes.
- Remove stems from okra and cut into 1/2 inch rounds.
- Add okra and stir-fry 5 minutes.
- Add seasoning and canned tomatoes (with liquid) and stir-fry 10 minutes.
- Add a little water if the sauce gets too thick.
