Mushroom Soup

Cooking time: About 15 minutes
Makes: 2 servings
Ingredients
- 2 T. extra virgin olive oil
- 1 cup chopped mushrooms
- 1/2 cup chopped carrots
- 1/2 cup chopped yellow onions
- 2 cups bouillon
Directions -
- Heat oil in 1 quart pan and saute vegetables 5 minutes, stirring occasionally.
- Add bouillon, cover and simmer 10 minutes.
- Salt and pepper to taste.
