Manchego Polenta

  1. Boil 1 1/2 cup water in sauce pan.
  2. Blend polenta in remaining 1/2 cup cold water until smooth.
  3. Add polenta mixture and simmer, stirring continuously until it thickens.
  4. Finely grate manchego cheese
  5. Blend in grated cheese and remove from heat.
  6. Stir in butter until it melts. Add salt and pepper.
