Manchego Polenta

Ingredients
- 2 cups cold water - divided
- 1/2 cup polenta (corn meal)
- 2 oz. manchego cheese
- 1 T. butter
- 1/4 t. salt
- 1/4 t. pepper
Directions
- Boil 1 1/2 cup water in sauce pan.
- Blend polenta in remaining 1/2 cup cold water until smooth.
- Add polenta mixture and simmer, stirring continuously until it thickens.
- Finely grate manchego cheese
- Blend in grated cheese and remove from heat.
- Stir in butter until it melts. Add salt and pepper.
