Goat Cheese Apricot Almondine
Prep time: About 15 minutes
Cooking time: About 12 minutes
Makes: 75 servings
- 1 lb. dried apricots
- 3/4 c. almonds
- 1/4 c. orange juice
- 8 oz. soft goat cheese
- Spread almonds in baking sheet and toast 12 minutes in 300 deg.F oven. Cool and chop.
- Blend cheese and orange juice to make more spreadable.
- Mix in chopped almonds and spread on one side of each dried apricot.
- Serve in one layer in a baking pan, cheese-size up, so the apricots don't stick together.
