Goan Fish Curry

Makes: 2 servings
Ingredients
- 6 oz. fish fillets (like tilapia or cod)
- 2 T. extra virgin olive oil
- 7 oz. chopped onions
- 1/2 t. dry mustard
- 1/2 t. chili powder
- 1 t. curry powder
- 1/2 t. garam masala
- 1 1/2 t. coriander powder
- 1 1/2 t. cumin powder
- 1/2 t. turmeric powder
- 14 oz. can of diced tomatoes, crushed
- 1 cup coconut milk
Directions
- Rub some salt on both sides of fish fillets. Let rest 10 minutes in refrigerator.
- Stir fry onions in olive oil with mustard, chili powder and curry for 5 minutes.
- Add garam masala, coriander, cumin and turmeric and stir fry 5 minutes.
- Add crushed tomatoes and stir fry 3 minutes.
- Add the coconut milk and lemon juice and simmer 3 minutes to finish the sauce.
- Add fish fillets, cover and simmer 10 minutes.
Good served on cooked rice and topped with some chopped cilantro.
