Fish Tacos

Directions -

  1. Mix mangos, onion, cucumber, yogurt, lime juice and seasoning to make a salsa.
  2. Cut fish fillets lengthwise to make thick strips.
  3. Mix corn starch into bread crumbs.
  4. Coat the fish strips with bread crumbs.
  5. Heat oil in a skillet and fry fish strips a total of 8 minutes, turning twice.
  6. Lay one lettuce leaf across center of each tortilla. Center a fish stick on the lettuce.
  7. Spread 1/4 of mango salsa next to each fish stick. Wrap with lettuce, roll up tortilla and serve.
