Egg Drop Corn Chowder

Ingredients
- 1 t. toasted sesame oil
- 2 t. minced garlic
- 2 t. minced ginger
- 3 c. broth or boullion
- 4 t. corn starch
- 1/4 t. turmeric
- 1 c. frozen sweet corn kernels
- 1 t. low salt soy sauce
- 2 t. vinegar
- 1/2 t. Tony Chachere's Cajun seasoning
- 2 eggs
- 1 scallion, chopped
- 1 oz. Fritos corn chips
Directions
- stir corn starch into 1/2 cup of cold water until blended. Set aside
- Heat oil in 2 qt. soup pan
- Add garlic and ginger and simmer 1 minute with stirring.
- Add broth, heat to boil and simmer 5 minutes
- Add sweet corn and cornstarch mixture, stir a few times for 3 minutes
- Add soy sauce, turmeric and Cajun seasoning.
- Beat the eggs in a measuring cup with a pouring spout
- While stirring the simmering soup, slowly pour a thin stream of egg mixture into the soup
- Cook the eggs 2 minutes to set them
- Serve soup topped with Fritos and chopped scallions
