Cornmeal Pancakes

Makes: 8 4-inch pancakes
Ingredients
- 1 1/2 c. all purpose flour
- 1 1/2 c. cornmeal
- 1 T. granulated sugar
- 1 t. baking powder
- 1/2 t. baking soda
- 1/2 t. ground cinnamon
- 1 c. plain Greek yogurt
- 1 T. light olive oil
- 1/4 c. milk
- 1 egg, lightly beaten
Directions -
- In a large bowl, mix the six dry ingredients.
- Blend in the yogurt, oil, milk and egg.
- Lightly oil a heated skillet and cook pancakes, turning when bubbles form around the edges.
Serve with your choice of maple syrup, berries, yogurt and/or sauteed apples.
