Congee (jook) - Chinese rice porridge

Preparation time: 5 minutesMakes: 2 servings
Ingredients
- 2 t. mild olive oil
- 1/2 cup chopped yellow onions
- 2 cups cooked rice
- 2 cups bouillon
- 1 t. chopped ginger
- 4 oz. diced pork
- 1 cup frozen peas
- 1 green onion, chopped
Directions
- Heat oil. Saute onions 5 minutes.
- Add rice, bouillon, ginger and pork. Cover and simmer 30 minutes. Stir occasionally.
- Add peas and simmer 5 more minutes.
- Serve, topped with chopped green onions.
Also good with chicken. Simmer chicken leg or thigh with rice.
Remove chicken, discard skin and bone, chop meat and return to congee.
