Bean Casserole

Prep time: 15 minutes

Makes: 6 - 8 servings

Directions

  1. Heat olive oil and saute onions 5 minutes. Add minced garlic and saute 2 more minutes.
  2. Add beans, tomatoes, corn and seasonings. Simmer 10 minutes.
  3. In a greased 9-inch casserole, spread a thin layer of this mixture on the bottom.
  4. Add a layer of chips and top with 1/2 of the remaining mixture.
  5. Add a layer of chips and top with the remaining mixture.
  6. Top with a layer of chips and distribute cheese on top.
  7. Bake 25 minutes in preheated 375 deg. F. oven.
  8. Top with your choice of chopped green onions, chopped cilantro, diced avocado and/or plain Greek yogurt.
