Bean Casserole

Ingredients
- 2 T. olive oil
- 1 cup diced onion (4 - 5 oz)
- 1 t. minced garlic
- 2 t. cumin
- 1 t. Tony Chechere's creole seasoning
- 14 oz can diced tomatoes
- 2 15 oz. cans of beans (kidney, black)
- 15 oz frozen corn (or canned, drained)
- 3 oz shredded cheddar cheese
- 3 oz taco chips
Directions
- Heat olive oil and saute onions 5 minutes. Add minced garlic and saute 2 more minutes.
- Add beans, tomatoes, corn and seasonings. Simmer 10 minutes.
- In a greased 9-inch casserole, spread a thin layer of this mixture on the bottom.
- Add a layer of chips and top with 1/2 of the remaining mixture.
- Add a layer of chips and top with the remaining mixture.
- Top with a layer of chips and distribute cheese on top.
- Bake 25 minutes in preheated 375 deg. F. oven.
- Top with your choice of chopped green onions, chopped cilantro, diced avocado and/or plain Greek yogurt.
