Asparagus Turkey Noodle Salad

Ingredients
- 1 T. sesame oil
- 1 T. peanut butter
- 1 T. rice vinegar
- 1 T. water
- 1 T. soy sauce
- 4 large lettuce leaves, chopped
- 2 green onions, chopped
- 1 package Ramen noodles (3.5 oz)
- 6 oz. cooked turkey or chicken, cut into 1-inch pieces.
- 1 cup asparagus, cut into 2-inch lengths
Directions
- Steam asparagus 5 minutes until barely tender.
- Blend sesame oil, peanut butter, vinegar, water and soy sauce.
- Before opening the Ramen noodle package, crush the noodles.
- Pour the noodles into a salad bowl. Discard the flavor packet.
- Add all other ingredients, stir to coat with the dressing, and serve.
