Makes: 2 servings
- 3 c. broth
- 2 T. uncooked rice
- 2 c. chopped arugula, tightly packed
- 6 oz. Greek yogurt
- 1 lime, squeezed
- Boil broth. Add rice and simmer 10 minutes.
- Add sorrel and simmer 10 minutes.
- Stir in yogurt and lime juice and serve.
